I've got most gadgets in my kitchen, but I don't own a madeleine tray.

Inspired by last night's Celebrity Bake Off I really wanted to make the buttery Parisian cake, but I needed to improvise when it came to the baking tin.

So I simply turned muffin cases into little boats and they turned out brilliantly.

They were delicate, delicious and super easy to make.

The mini cakes contain the same ingredients you'd find in a British Victoria sponge, but the method is very different.
